Bacon is cured meat, which is generally sourced from the pig's mid-section. Streaky bacon is sourced from the pork belly, whereas the back bacon is sourced from loins. Green streaky bacon is non-smoked and relatively fresh cured bacon that contains no nitrates and can stay fresh for a short period. It has a higher fat content, is called streaky bacon as it is shaped like rulers and is often used as wraps or as a meat drape or fillings inside a sandwich or a roll. The fat content adds to the richness in flavour and becomes crispy when pan-fried or grilled. Green streaky bacon cooks fast and is best served crispy with salads.
