If you asked people what type of meat they prefer above all others you would no doubt get a number of different answers because, after all, there are many different types that are produced from a range of creatures. Many are four-legged animals while there are also lots of different birds ranging from chicken to goose to pigeon.

However, the most common answer that we have found at Butchers Fridge has always been beef. There are so many things that you can do with it to produce the food that you love. In this article, we are going to look at some of our customers’ favourites.

Roast Silverside Beef

Silverside, also referred to as “rump corner cut” or just “corner cut”, comes from the rear leg of the animal. It has a noticeable silver wall of connective tissue, hence the name. It is cut from muscles that have had lots of exercise, and so is best slow roasted until it is a light pink in colour. Slow roast silverside beef ensures that it will have a melt-in-the-mouth texture.

Once roast silverside beef has been cooked to the optimum point, remove from the oven and let it rest for at least 45 minutes. Turn the joint fat side up and carve it across the grain for ultimate tenderness. Serve with gravy, roast potatoes, carrots, parsnip, and your favourite green vegetables. This produces a superb lunch or dinner that also has the benefit of being economical.

Beef Brisket in the UK

This is another cut of beef that has the advantage of being inexpensive. Brisket also means “breast meat” and is cut from the breast / lower chest of the animal. In a similar way to silverside, it comes from a working part of the creature and so beef brisket in the UK also needs to be slow cooked.

At Butchers Fridge we recommend two ways of cooking beef brisket in the UK. If you wish to eat it hot, then you can cook it slowly in the pressure cooker. Alternatively, you could also roast it slowly in the oven, then let it cool down completely. Cut into thin slices, beef brisket in the UK makes a perfect salad for those hot summer days that are coming up shortly.

Sirloin Steak Beef: An All-Time Favourite

Of course, another great beef favourite is sirloin steak beef. As with all of our beef, our sirloin steak beef is grass fed, which results in the finest sirloin steaks that you can get. The most popular way of cooking them is to pan-fry them in hot virgin olive oil, turning them over quickly after a couple of minutes or so, to make a superb good old English steak and chips. If you prefer your steak well done, then you can cook it for a little longer on each side. 

Understanding Sirloin Steak Prices

Sirloin steaks are cut from the front of the rump on the hindquarters of the animal. This means that our sirloin steak price is not going to break the bank. Yet, cooked to perfection, sirloin steaks produce a marvellous lean and tender texture which results from the marbling of the meat. In fact, a lot of our customers prefer them to fillet steaks, not just because of the flavour, but also because our sirloin steak price means that they make a very affordable evening meal for the middle of the week.
